These pancakes are not only quick and easy to whip up but they are also gluten free and kid approved! If you are looking for a healthy alternative to regular pancakes then these are for you. This recipe makes about 4 regular sized pancakes, generally a serving for 1.
1 Banana, mashed
1 Egg, beaten
1/3 Cup of Quick Oats (gluten free)
Cinnamon, to taste (optional)
½ tsp Vanilla
1 tsp Coconut Oil
1 tbsp Almond Butter
Mix the mashed banana with the oats until well blended. Add in the egg along with the cinnamon and vanilla. Mix well. Heat a frying pan on medium heat. Add the coconut oil and ensure that it covers the entire bottom of the pan to ensure the pancakes do not stick. Cook until golden brown on each side. Place on plate and drizzle the almond butter over the pancakes. Serve and enjoy!
