This soup is simple with no additives. Just pure cauliflower! Go ahead and enjoy!
1 cup water
1 head of cauliflower chopped (the smaller the quicker it cooks)
1 onion, finely chopped
1 tbsp olive oil
Salt and pepper to taste
Place a pot on the stove on medium heat. Add the olive oil and onion. Cook until soft. Add in the cauliflower and water. Cover and let the cauliflower steam until soft. When done transfer contents to a food processor or blender. Blend until smooth. Add salt and pepper to taste. Place in a bowl and serve! Makes approximately 2 servings.
