So every kids loves chicken fingers, but with this recipe even adults will be dying for seconds. Indulge in your inner child and give this recipe a try because not only are they delicious but they are nutritious as well!
This recipe will make anywhere from 3 – 4 servings.
1.5 lbs of boneless skinless chicken breast
3/4 Cup Almond Meal (you can make your own, here’s the recipe)
1 Tsp Salt
1.5 Tsp Paprika
1/2 Tsp Coriander, ground
1/2 Tsp Cumin
1 Tsp Garlic powder
Black Pepper, to taste
Heat your oven to 425 Degrees. Cut the chicken breast into strips. In a bowl, combine the almond meal with paprika, coriander, cumin, garlic and salt. Mix together well. Place the eggs into a separate bowl and whisk until well mixed. Dip the chicken strip in the egg, then dip into the almond meal mixture. Place the chicken on a baking sheet lined with parchment paper. Crack fresh black pepper over the chicken. Place baking sheet in the oven for about 20 minutes or until fully cooked. Cooking time may vary depending on the size of the strips and the individual oven.
If you are going for health, skip the sweet sauces or ketchup and use ones such as hot sauce (be careful for sodium content) or Dijon mustard! You will be pleasantly surprised I assure you!
