Sweet potatoes are packed with sweetness and are a complex carbohydrate, so you don’t get a quick sugar high and crash later on. This recipe is easy and delicious, especially if you like pumpkin pie! 1 large sweet potato
Cinnamon or pumpkin pie spice
Microwave your sweet potato, with peel on, for approximately 10 min on high (depends on your microwave) or until soft in the centre. Make sure to poke some holes in the sweet potato so that it doesn’t explode in the microwave. When done, peel, cut into chunks and sprinkle with cinnamon or pumpkin pie spice. Serve and love! For added taste you can mash the sweet potato and add nuts, such as pecans, and a little melted butter! So delicious! Enjoy!
