This recipe is quick and easy to make. It has a great Italian flavour and is filled with lots of vegetables to ensure you are getting your daily fill. Try it out, I am sure you will love it.
3 large tomatoes, chopped
1 tbsp olive oil
3 cloves of garlic chopped
1 tsp garlic powder
2 tsp Herbs de Provence
1/2 an onion, chopped
2 peppers, red yellow or green, chopped
1 cup white mushrooms, chopped
1 Zucchini, chopped
1 tbsp sirachi sauce
2 large chicken breast, cooked and chopped
Salt and pepper to taste
Place oil in a pan and heat on medium. Add the tomatoes, onion and garlic (both chopped and powdered to the pan). Cook for 3 minutes. Add the peppers, mushrooms, zucchini and Herbs de Provence to the pan. Stir often. Cook until the tomato begins to break down and the peppers and mushrooms are soft. Add in the cooked chicken breast, mix well. Add the sirachi sauce and salt and pepper to taste. Cook for another minute. Serve and enjoy!
This dish pairs well with chicken, steak, pork, noodles or even spaghetti squash!
