Easy Herb & Mustard Pork Tenderloin


2 lbs pork tenderloin
1/3 cup Dijon mustard
1 Tbsp Rosemary, dried
4 carrots peeled and chopped
1 Onion, chopped
3 cloves of garlic, crushed
Salt and pepper, to taste

This recipe can be cooked in a crock pot or roasted in the oven.
Place carrots and onion on the bottom of the crock pot or roaster (depending on cooking method). Rub the pork with the Dijon mustard and rosemary. Place in crock pot or roaster. Sprinkle with salt and pepper. If cooking in the crock pot place on low for about 8-10 hours or high for 5-6. If cooking in the oven, cook at 350 degrees for about 45 minutes or until no longer pink.
