Broccoli, Cheese & Egg Cups – Breakfast Recipe


Looking for a different breakfast recipe? These cups help you get your veggies and are packed full of protein, to help keep you going all morning long. These can be made in the morning or made ahead in order to save some time!

1 cup of broccoli steamed
3 whole eggs
3 egg whites
2oz of cheese
Salt and pepper, to taste

Pre-heat the oven to 350 degrees. Grease 6 muffin tins, can use non-stick cooking spray or oil. Place steamed broccoli in muffin tins. Sprinkle cheese evenly among the tins, on top of the broccoli. Beat the eggs together in a bowl. Add some salt and pepper to them for extra flavour. Pour the egg mixture evenly among the tins. Place in oven and leave to cook for approximately 20 minutes or until cooked. Serve and enjoy! One serving is 2 – 3 cups.
