1 pound of extra lean ground beef
2 bell peppers chopped
1 jalepeno pepper seeded and chopped
1 small onion chopped
1/3 cup of salsa
1 tbsp Chili powder
2 cloves of garlic crushed
1 head of Boston leaf lettuce
Shredded cheese for toppings
Salsa for toppings
Place the beef in a non stick frying pan and cook until brown. Add in garlic, Chili powder, onion. Stir and cook for 2 mins. Add in the bell pepper. Stir and cook until soft. Add the salsa, stir and cook for 2 more minutes.
Take 2.5 ounces of the beef mixture and place it inside a leaf of lettuce. Top with 1/2 ounce of shredded cheese and 1 tbsp of salsa if desired. Serve and enjoy!
These beef tacos are both delicious and nutritious and even gluten free! We love them! Give them a try for a low carb meal! However if you aren’t worried about carbs or gluten feel free to place this mixture in a hard or soft taco!
